Roasted Butternut Squash Soup
Ingredients
1 medium butternut squash, peeled, seeded, and cubed
2 carrots, chopped
1 apple, peeled and chopped
1 small onion, chopped
2 tablespoons olive oil
4 cups low-sodium vegetable broth
1 teaspoon ground cinnamon
½ teaspoon nutmeg
Salt and pepper to taste
Instructions
Preheat oven to 400°F. Toss squash, carrots, apple, and onion with olive oil. Spread on a baking sheet and roast for 25–30 minutes until tender.
Transfer vegetables to a large pot. Add broth, cinnamon, nutmeg, salt, and pepper. Simmer for 10 minutes.
Blend with an immersion blender (or carefully in batches with a regular blender) until smooth.
